A sign that fall is around the corner

In late August, you begin to see red peppers set out to dry.  It is perhaps something of a confirmation that fall is around us.  During the fall, Korean housewives often make huge amounts of kimchi to be set aside for the winter months, or at least they did until the days of modern refrigeration.  I think that some still do make huge amounts of the stuff in the fall.  Red peppers are an essential ingredient for most kimchi and they do need to be dried.  You have to be careful where you step during the months of August and September!
